Gil’s sisig is made with deep-fried pork belly which gives the dish its deep crunch and rich flavor. He builds flavor with ingredients like lemon juice, red and yellow onions, Thai red chilies, soy sauce, and more. Served in a sizzling skillet, the dish is topped with a raw egg yolk and accompanied with steamed rice.
