A Crash Course on Rabbit and Polenta with Elena Faita

In this episode of Giardinos, Le Bremner chef Danny Smiles gives props to Elena Faita, the godmother of Italian cooking in Montreal. At her Mezza Luna cooking school, Danny gets a crash course on a hearty northern Italian rabbit and polenta dish—perfect for Montreal’s brutal winters. He also learns the dangers of cooking with pepper and the not-so-delicate art of butchering a rabbit.

But right before his one-on-one cooking lesson, Danny walks us through Montreal’s Little Italy to pick up supplies and pastries for Elena, whose nearby Quincaillerie Dante hardware store is an institution and one of the last old-school remnants of a rapidly evolving neighbourhood.

Brooklyn is Pizza Heaven

The inaugural episode of ‘The Pizza Show’ kicks off in Brooklyn. Our host Frank Pinello, a born and bred Brooklynite, remembers the importance of his neighborhood pizzeria growing up. We start at Roberta’s in Bushwick, a pizzeria that has truly changed an entire neighborhood. Then we spend some time with Mark Iacono, owner of Lucali in Carroll Gardens, who built his restaurant by hand and is working tirelessly to preserve the tradition of his neighborhood through pizza. And what would any pizza show be without visiting the king: Dom DeMarco of Di Fara in Midwood? Dom is a legend, and even when great pizzaiolos visit him, like Frank and Mark, they can end up questioning their own pies.

Denver’s Black Metal Brewery: Craftwerk with TRVE Brewing Company

There are many breweries in Colorado, but only one craft brewery made for and by metalheads: TRVE Brewing Company. When Nick Nunns and Zach Coleman aren’t playing and listening to metal, they’re hard at work making beer at their Denvery brewery. Nick and Zach decided to take a different approach in their brewing; instead of concentrating on what the consumer wants, they brew the beer that they wanna brew—and hopefully others like it, too.

While most craft breweries focus on heavy, full-bodied, high-ABV beers, TRVE aims to get full-flavor beers with a lower alcohol content, for good session beers that you can drink without getting totally wrecked.

With a new production faculty in the works, expect to see more of TRVE in the near future.

MUNCHIES Presents: The Mission Chinese Food Cookbook

When Danny Bowien does a cookbook tour, you expect the unexpected. He let MUNCHIES tag along to the LA release party for “The Mission Chinese Food Cookbook” for a ridiculous night of food and punk rock. Hosted by Kris Yenbamroong at Night+Market in West Hollywood, we were treated to dishes by guest chefs Andy Ricker (Pok Pok), Chad Robertson (Tartine), and Jessica Koslow (Sqirl). And if that wasn’t enough, the night ended with a face-melting performance by Danny’s band NARX! with Chris Conley (Saves the Day) and Geoff Rickly (Thursday, No Devotion).
