Pommes Darphin is the Best Hash Browns You’ll Ever Eat

Pommes Darphin is a fancy French way of saying “one the the best hash browns you’ll ever eat.” In this video, Jeremiah Stone—chef and owner of Contra, Wildair and Una Pizza Napoletana in New York—will show you how to make this fancy French hash brown which also happens to be a classic dish any culinary school grad knows.

Crispy on the outside and hot and creamy in the center, this butter-bathed fried potato dish is cooked to a golden brown and topped with a quick pickle of a jalapeño and onion relish, and then a little “foie gras of the sea”—uni.

You of course can just top these perfect hash browns with a fried egg and call it a day, but if you’re feeling a little fancy, this is how you treat yo’self.
