MUNCHIES Guide to Wales: Welshman’s Caviar and Mystical Sea Trout

After drinking with the rugby girls in Cardiff, Charlet heads to Freshwater West beach for a traditional Welsh breakfast (and hangover cure.) Despite its proximity to England, Wales boasts a far more exciting national breakfast of cockles and seaweed, a.k.a. “Welshman’s caviar,” alongside bacon and eggs.

Next, Charlet travels to Carmarthen to meet its famous coracle fishers, a small group of fishermen who go in search of a rare sea trout known as sewin—the “unicorn of Welsh rivers.”

On the Art and Practice of Sushi: The Sushi Chef with Masaharu Morimoto

Masaharu Morimoto is most famously known for being an Iron Chef, but there is another side of him we don’t get to see too often. In addition to his life on TV, Chef Morimoto is a successful restaurateur who has worked long and hard to build a team that can create great food at each of his restaurants. We spend time with Morimoto at two of his restaurants, Morimoto in Chelsea and Momosan Ramen & Sake in Midtown.

Morimoto had two dreams when he was a child, to become a sushi chef or a professional baseball player. After sustaining an injury he dedicated his life to sushi and since then has applied himself to the art and practice of sushi every day. As Morimoto says, “I don’t want to be a celebrity or a celebrity chef. I want to be known as a legitimate chef.”

Chef’s Night Out with The Four Horsemen

On this episode of Chef’s Night Out we head out for the evening with The Four Horsemen, a restaurant and wine bar in Williamsburg, Brooklyn. Chef Nick Curtola embarks on a meat filled evening with a few of his good friends. The night begins at Momofuku Ssäm Bar with snacks, raw bar, and a large format brisket dinner, then on to Franny’s for pizza, and finally ends at Achilles Heel in Greenpoint with a lambs head and steak. The crew then heads back to The Four Horseman for lambs tacos with a variety of middle eastern condiments and lots of wine.
