How should a non-profit operate during a crisis? For Rethink Food’s outreach coordinator Elijah Inniss, it means doubling down on the non-profit’s mission: to rescue food from being wasted across NYC and turn it into meals for those in need. On Elijah’s food delivery route, he talks about the expansion of Rethink’s staff in response to the Coronavirus pandemic, utilizing the Michelin-starred fine dining restaurant Eleven Madison Park as a commissary kitchen, and how his life has been changed by rescuing food.
