This Petite blanquette de poulet à l’estragon (Taragon Chicken) dish has its humble beginnings from a similar French dish made of poor cuts of Veal. Instead of veal, however, more readily available, and less expensive, chicken thighs have been substituted. We start by cooking the chicken and vegetables, such as carrtots and mushrooms. Muriel then shows us how to make a creme freche sauce. She will be the first to tell you that she is not a chef, but an ordinary cook making French favorites. Southwestern Macaroni and Cheese with Adobo Meatballs Recipe

In this episode of “What’s Cooking?” Michael travels to Westminster, Colorado where Allrecipes home cook, Kristin, teaches us how to make Southwestern Macaroni and Cheese with Adobo Meatballs!

Kristin makes unique additions to this macaroni dish including a variety of spices and cheeses, and, of course, adobo meatballs. In a well-made adobo powder, none of the spices dominate, but rather the taste is a delicate balance of all the ingredients. The spices vary, but generally include several types of peppers (in addition to the chipotle and most likely those on hand), ground cumin and dried oregano. Adobo seasoning is flavorful, but not generally hot. This adds some heat, as well as giving the dish it’s unique name.
