Kimchi and Korean Opera

Since the antiquity, music has always played an important role at mealtimes. In Berlin, this partnership is most commonly noticed in the form of nightclub-restaurant hybrids.

Berlin’s Kochu Karu—a Spanish-Korean fusion restaurant—is host to a very special event: the “Singmahl”: a multi-course meal where each course is accompanied by live classical opera music. These compositions are performed by the restaurant’s co-owner, Bin Lee, who trained as a classical soprano singer and has performed at the world-renowned Deutsche Oper. With every singalong night following a certain theme, we got to observe—and enjoy—a seasonal autumn-based meal. Each evening features a menu of imaginative food creations by co-owner and head chef José Miranda Morillo and carefully selected classical songs which complement each course.

On the day of the meal, we follow José as he makes his preparations. He explains his inspiration for creating these unique fusion food dishes, and as the guests slowly arrive at the restaurant, we get to hear and see the real combination of food and song.

The Best Slice of Pizza in LA: Chef’s Night Out with Pizzanista!

You often hear people lament that you can’t get a good slice of pizza in LA—and for the most part, that’s true. Except in the case of Pizzanista!, a pizza place in the city’s arts district started by former pro skateboarder Salman Agah and his wife Price.

We follow Salman and Price for a night out in LA as they hit up some of their favorite local spots. First, we head to Roy Choi’s new restaurant Commissary at the Line Hotel, where the group sips on drinks and chows down on some interesting vegetables described as “carrots that taste like hot dogs.” Then it’s off to Ruen Pair for the papaya salad that Salman swears by. Our last stop is Monty Bar for drinks, and then it’s back to Pizzanista!, where Price celebrates her birthday by cooking up a stinging nettle pizza for their friends.

Crossfaded on Cannabis Cocktails: Bong Appetit

Bong Appetit host Matt Zimbric‘s latest adventure leads him to an experimental cannabis cocktail party in Los Angeles. Matt meets with leading mixologist Daniel K. Nelson of (Partner, The Black Cat) to learn the basics and some new tricks of the trade when it comes to making cocktails with cannabis.

After jumping into a 1972 Cadillac hearse party limo (as one does in LA), they hit up Aaron Justis (President, Buds & Roses) to research, shop and sample the perfect bouquet of ganja goods—may we recommend Silverback Grape Ape and Oregon Silver?—to infuse into their cocktails and food. On the menu: California fresh herb salad and sous-vide steak with cannabis compound butter.

Later, Daniel demonstrates how to get the right dosage to ensure that your cannabis cocktails don’t resemble dirty bong water and that your guests leave in a state of nirvana after having the the high-class meal of a lifetime. We’ll spark to that.
