The Animal Bikes mod adds in tons of animals and mobs that you can ride around on. All of these can be crafted and do not require a saddle to ride. Each creature has a special ability that you can use. The Ender Dragon can shoot fire, bats give night vision, cows can jump, and much more. Another cool feature is that the majority of them can be dyed different colors, and also spawn in as random colors when you summon them.
