The Sushi Chef: Nick Kim and Jimmy Lau

Nick Kim and Jimmy Lau are the masterminds behind NYC’s Shuko, a restaurant that plays with the traditional understanding and boundaries of what constitutes Japanese dining. From the hip-hop that fills the sushi bar to the apple pie that caps the meal, Nick and Jimmy are finding a balance between their traditional training with Chef Masayoshi Takayama (of the sushi empire Masa) and their diverse backgrounds. Nick grew up in Los Angeles in a Korean family who had roots in Japan, while Jimmy was born in China where he always helped his mother cook at home. While Nick and Jimmy’s personalities and roles at the restaurant vary—what Nick refers to as the “good cop, bad cop” approach—the two find a balance that complements each other’s strengths. As the two chefs experiment with new flavors and styles of cooking, the seasonality of the ingredients always remains at the forefront of their approach.

Boom Balloons

Red balloons float innocently around the neighborhood, but rumble like thunder when they go off.

I’m not suggesting this is something you should try, but if you do it anyway, make sure you use EXTREME caution, and be prepared for the police to show up 🙂

Special thanks to my good friend and neighbor Justin, who spent good money on a drone, and needed an excuse to fly it around and film something. Without him this video wouldn’t have happened.

Advanced experiments with one of my previous projects: (http://bit.ly/H2OExplode). I was blown away when I tried filling a balloon, and it floated up to the ceiling!

WARNING:

This video is only for entertainment purposes. I tried filling up a balloon with HHO gas from the generator I made in a previous project, and was astounded when I tied it off, and it floated up to the ceiling. This sparked an idea, and I’m sure you can guess what it was!

Since Hydrogen is lighter than air, it only made sense that a balloon filled with 2 parts Hydrogen and 1 part Oxygen would float similar to a Helium balloon. However, while Helium is inert and non-flammable, the difference with these balloons would be that they’d explode!! ..Theoretically anyway 🙂

I thought it would be fun to tie a fuse to the bottom of the balloon, to imitate a little ribbon dangling down, then light it and see if it would sail away.

Of course the bigger I filled the balloons, the more energetically they would rise upward. In fact some balloons went so high and so fast, that we couldn’t capture them on camera.

You can tell by the sound of the reports, that these balloons pack a powerful explosion. The noise could be heard reverberating around the neighborhood, and sounded like large ariel fireworks going off.

We did this experiment on the 4th of July, because while most of our neighbors are awesome and supportive of these experiments, the ones right behind us have a history of cowardly calling the police when they hear a bang from our house, instead of calling us directly to see what the noise was about.

I figured there was no way they could be justified complaining about arial explosions on the 4th of July .. so everyone was happy.

I have seen pictures of accidents where someone filled balloons with oxy-acetylene gas and accidentally set them off with static electricity and blew their truck apart. While I haven’t experienced that effect myself, I am encouraged to use as much caution possible, to avoid a trip to the hospital.

Again, I’m not suggesting this is something you should try, but if you do it anyway, make sure you use EXTREME caution, and be prepared for the police to show up 🙂
