Daniel Holzman and Michael Chernow are two meatballs from Manhattan who love meatball subs. After working in kitchens for a while, they eventually got their shit together and opened The Meatball Shop on the Lower East Side and, later, another location in Williamsburg. James Tracey might be the coolest chef we have ever shot for Munchies. When we first meet up with someone, there is usually a 30-minute warm-up period, but not with James. Within seconds after we arrived at Craft, we were looking at freshly slaughtered suckling pigs, meeting his all-star butcher, and joking around with his sous-chefs, Melanie and Mac. We were shocked by how relaxed James is considering he’s the executive chef at Craft and Colicchio & Sons. He likes his razor clams raw and his beer cold.
